Hot Chicken Salad

My friend Kathy over at  HASEKAMPS OF TULIP,

she was a real sweetheart a few weeks ago and sent me this lovely cookbook!  Now we all know that church cookbooks usually have the BEST recipes!  I mean who doesn't love a church potluck and you know the recipes in this cookbook have probably seen lots of potlucks!

























I chose this recipe after my other friend Laurie over at country linked recommended it.  I have not made many chicken salad's in my life, but this one turned out pretty good I think!  Our family enjoyed it on whole wheat buns.  I toasted the buns in the oven, and then put the hot chicken salad on it. 

When I made the recipe I used slightly less celery and bread crumbs.  I hope you give it a try, it was pretty tasty! 


2 C. Diced Chicken
1 C. Diced Celery
1/2 C. Chopped Nuts ( Iused pecans)
3/4 C. Mayo or Miracle Whip
1 C. Cream Chicken Soup
2 T. Diced Onion
1/4 tsp. Black Pepper
3 Sliced Hard Boiled Eggs

Mix all ingredients and pour into a greased casserole dish. Top with 2 cups buttered bread crumbs.  Bake at 450 degrees for 10 to 15 minutes until heated through.
